"Organic Farming
Methods" has been part of our farm since 1992. Thereafter, several
improvements were made to the farm; buildings totally renovated and new production
methods were implemented.

L'Arboriculture:
the orchard, made up of several types and varieties of fruit trees, bears fruit
most of the year; the olive grove provides oil and dried olives for the guest
table. Annual crops:
fresh durum wheat, spelt, chickpeas, cicerchia, several fresh varieties of vegetables
(in season) as well as certain wild herbs (nettles, chicory, amaranth, wild
asparagus, oregano, etc.) which form the base of a great many dishes in our
cuisine. Farmyard animals:
animal husbandry provides us with our fresh meat and eggs. Horses: not
part of our cuisine, but a way to teach our guests about the care and uses of
horses on the farm. Cottage products:
several local artisans bring about certain transformations of our products (into
flours and pastries), as well as, in our workshop (jams, canned tomatoes, fruits
and dried herbs). We also produce a small quantity of honey. |
